Fei Fei (飞飞) Wanton Noodles

-->

Address: Junction of Joo Chiat Place and Everitt Road, Singapore
Operating Hours: Seems to be 24 hours.

I remember having the noodles here eons ago (back when the policemen wore shorts..ok..maybe not that long). Back then, Fei Fei was located in a more run down and probably more nostalgic location. Due to laziness and my lack of ability to describe the place, I shall point you to a link which shows the picture (click here).

Well, as inevitable as it is in Singapore, urban redevelopment has led to Fei Fei being relocated to its present location. Cleaner, yes…more spiffy, yes…much reduced loss in “atmosphere”…unfortunately yes.

Time to check whether the noodles suffered any drop in quality.

The Wanton noodles (S$2.50) came in small, almost dainty, porcelain bowls. No accompaniment of soup to distract you here. The chilli for the noodles were placed in the spoon so that you can determine the amount you actually want - very thoughtful of them. There was an ordinariness about the contents of the bowl when it was presented. However, with a good and thorough mixing, a much improved picture emerged.

Before

From my first few bites, my taste prognosis was grim. The noodles were clumped together. The taste of starch was quite prevalent. And the Cha Sao (BBQ pork) was pedestrain while the Wantons (pork dumplings) were forgettable. I began to register the obituary of one of Singapore’s food icons.

Then, something miraculous happened. Every mouthful of the noodles begin to take on more flavour. The noodles began to unravel themselves into individual strands. At that moment, I was sorry to note that the noodles were almost gone…the remnants were pieces of the pork, one Wanton and the remaining chilli and soy sauce.

After

It hit me then…eureka! (my discovery may pale in comparison to Archimedes’ but I am sure some of you will find mine more applicable..not to say that you readers are not intellectual enough and will never use the principles of buoyancy and density…erm…also not to imply that you readers are pure and simple gluttons…ok..I will keep quiet now). The crux is to let the chilli and soy sauce permeate the noodles. Fail to do that and you will face the prospect of a below-par meal.

      Hi just to let you know that run down place is still around and they also sell fei fei wantan noodles. I am not sure whether they are related but I always go to the run down place due to sentimental reason. The run down place is just opp, across the road from this new stall that you patronise. :)
